docs: align UniMate bridge with official preprocessing

What changed

• make UniMate's official unseen-skeleton preprocessing and unified-normalization checkpoint the source of truth
• require commit, checkpoint and normalization provenance for arbitrary-rig results
• reframe Tiger_rig.glb as a preprocessing-parity fixture instead of a model failure
• update the prototype sequence and acceptance test

Why

Issue #8 now shows that the same Tiger_rig.glb generates correctly through the maintainer's pipeline. The bridge docs should not treat the upright result as a model limitation or duplicate an inferred preprocessing contract before the official path is released.

Docs only. The consumer adapter still waits for the official preprocessing release.
