What changed in this PR

This PR raises the minimum gevent version used by PyMongo’s test tooling to include Python 3.11 wheels and removes an obsolete compatibility workaround.

• Raise the gevent minimum from 21.12 to 25.9.1 in the dependency group and lockfile metadata.
• Remove the setuptools override for minimum-dependency gevent tests.
