docs: keep the Debian suite configurable with a trixie default - #51

Clarify that Trixie is what we ship and what CI on main builds, while build scripts and workflows take the suite as a parameter defaulting to Trixie. Positive wording only; avoids misreading trixie-only as hardcoding.
