Adds product/service category roots and detail lookup, including ancestors, child categories and paginated class products. Documents category-prefix filtering and expanded product text search in Spanish and English.
Validation: both OpenAPI specifications pass reference/type checks and locale contract parity (134 operations each).
Stacked on #320. Draft until the corresponding API is ready.
