Document Kubernetes image flavor selection

Summary

• split the Kubernetes resources into a shared base and lean/LArCV image overlays
• default S3DF Makefile deployments to the LArCV overlay while supporting FLAVOR=lean
• document the distinction between publishing both GHCR images and choosing one for deployment, including exact release-tag pinning

Validation

• .venv/bin/python -m pytest test -q (208 passed)
